A visit to Billingsgate Market, London.

Same weekend than the Slow Food London Market on the South Bank - could be fun to combin for a definite grastronomic weekend!

to finish our 'term' with grand finale, we have prepare a double bill event to cover different aspects of the food chain we tend not to be aware of
Different format than usual - one overnight stay in London if you are that way incline / a Sunday trip Banbury way
 
 
In order to make it happen, we need to get confirmation of attendance by the 17/07 end of play: market visit with or without overnight stay

First course: Fish 01/08 (optional overnight stay 31/07)
 
Fish market tour by the Billingsgate Seafood Training school
(optional hotel stay - IBIS / £100 per night - and dinner on Canary Warf the night before)
£30/head (£25 school + SFO org fee) - members or non members including breakfast + 1h45 tour from 6:15 until 8:00 a:m by group of 7 max with a specialist telling us how to identify the different species, evaluate the freshness of the fish

Each trading day at Billingsgate Market offers buyers an opportunity to see the largest selection of fish in the United Kingdom. Daily arrivals from the coast and overseas ensure a continuity of fresh supplies and with some 54 merchants trading in close proximity in the Market Hall, competition is keen.

Program:

*    What makes an animal "right" for slaughter?  For example, how do
your Longhorn cattle compare with Aberdeen Angus with veal etc?
*    Sourcing meat that you don't rear yourselves
*    Hanging and storing of meat and poultry and game
*    Legislation
*    Different cuts - English (e.g. Sirloin), French (e.g.
Chateaubriand), American (T-bone, can't find this in the Larousse so I guess
it is American!)
*    Knife Skills
*    Training a butcher
*    Coping with the "Delia" effect - for example, what effect did Hugh
Fearnley-Whittingstall's programs about chickens have?

We are aiming at seeing the stock if close enough from the farm shop
We would finish at about mid day, having had an opportunity to make
some purchases first!
